The word tomato pickle does not not do any justification for dish ... as it could not be taken as little as other pickles... it is a multi tasking dish it can be combined with any main dish and can taste heavenly ... best combination are with hot rice... rolled with chapathi or naan ... best side dish for puri ,Idly,dosa, paniyaram,idiyappam It can be also used to enhance ur grilled sandwhich...so not delaying furthers lets let's move to the yummy yummy all purpose dish ....

As it multi used it does not mean to have great ingredients it's simple seriously as simple as possible All u need is,

  • Tomato- 3kg 
  • Gingerly oil - 1 cup 
  • Red chilli powder- 3 tbsp 
  • Mustard seeds - 1/2 tbsp 
  • Astofotedia - 1 tbsp 
  • Curry leaves - 5-6 strands 
  • Garlic- 1 cup 
  • Salt - as needed 


Method:

Make sure u use all clean and dry vessel's as we want the pickle to last long

Wash the tomato and clean it with clean and dry cloth Chop them in to tiny pieces ..or use a chopper for easier work as we have 3 kgs which is not easy

Now heat the kadai add all of the gingerly oil let it heat up(I use home made gingerly oil which I grind in a oil mill in my native place) so 1 cup will lead to a lot of oil if u are having refined oil then I may need extra but check it only when at the end if the oil does not oozes out much ,as oil here is very important in preservative terms

Now put the mustard seeds and let it crackle

Then add peeled garlic pods ..( I chop garlic finely but it's totally up to to either add it whole or cut in to half)

When the garlic pods start giving out smell add curry leaves and saute for 1 min

Now add the chopped tomatoes Make sure u take a big kadai as there will b a lot of tomatoes Keep the stove to the simmer position and leave for atleast sake mins U can skip the stove and transfer the mixture to a miceowave safe bowl and keep it in the microwave at low for 10 mins After few mins of leaving the tomato like that ,we can see that the tomato has mashed itself and the juice are out and reduced too

Make sure u stir the mixture often in order to avoid burning

Now add salt and red chilli powder Again simmer the stove or keep in the microwave for atleast 15 to 20 mins or till the tomato is fully reduced and the oil oozes out That's it tomato pickle is ready
