So reading all the Benifits of iron casting vesseles and dosa tawas....went and bouth my iron dosa tawa from the traditional iron makers here in chennai..When i bought my first iron dosa tawa for the first use i went all the way through all the website but dint find nothing useful,

here is wat i did for my dosa tawa which now makes a super crisp dosa without any stickings

U Need:
Lemon Salt - 1 Cup
Rock Salt - 1 cup
Iron Scrubber - 1
warm water
Liquid soap - Preferably Lemon base
rice portiage - 1 cup
oil - 3-4 tbsp
dosa batter - 1 small cup enough for one dosa

  • First Wash ur tawa with soap throughly with liquid soap 
  • then pour the rice portiage on the tawa till it can hold and leave over night
  • the next day morning throw away the portiage and scrape the tawa with the scrubber and lemon salt and wash
  • repeat the lemon salt wash atleas for three or four times
  • then again pour the rice poriage and keep it aside for the whole day
  • now on the next day completly wash the dosa tawa and put the rock salt on it
  • scrub with the srubber niecly so that all the rust that are remaining will fall off
  • wash once
  • now put the dosa tawa on the flame apply oil
  • now pour the dosa batter on in and cook the dosa
  • once the dosa is cooked take it away from the tawa and throw it away
  • it should not be consumed
  • now apply 3 tbsp of oil in the dosa tawa and apply it all over the tawa
  • now the dosa tawa is ready for the use
  • even before using it for dosa u can season it using musturd seeds and onions for best results

      Rice portiage is Drained water from the cooked rice...
      Like u have cook the rice with excess of water and drain the water
