- Left Over Idly - 5-7 nos (according to size)
- All purpose flour (Maida) - 1 tbsp
- corn flour - 2 tbsp
- Red food colour - 1 pinch (optional)
- water - as needed
- Oil - For deep Frying
For masala :
- Onion - 1 roughly diced
- Tomato - 2
- Chilli powder - 1tbsp
- Garam Masala - 1 tbsp
- Soy sauce - 1 tbsp
- Ginger garlic paste - 1 tbsp
- Cumin seeds - 1/2 tbsp
- salt - For taste
- Lemon juice - 1/2 tbsp
- Spring onions - Garnishing
- Coriander leaves - Garnishing
Method :
- Heat oil for deep frying in a kadai
- In a bowl mix maida ,corn flour and food color (i did not add it its optional) with water to form a thick batter
- keep the idlies in the freezer for few mins so that they can become hard
- if your idlies are old are hard enough skip the above step
- now cut them the cubes
- dip the cubed idlies to the mixed batter and deep fry them till golden brown
- We can eat this itself plainly and its yummy and called as fried idlies
- Do the same to the other idlies and keep them aside
- now in a separate pan heat a tbsp of oil and add onion and tomatoes
- fry them till they are cooked well
- grind them in a mixi jar till they grind in to a fine paste
- again in the same kadai add oil and sprinkle some cumin seeds
- after they pop add the grinded onion and tomato masala
- Now add the ginger garlic paste
- then add salt,chilli powder and garam masala
- cook till the raw smell goes
- now add the fried idlies and simmer the stove
- wait till the idles are coated with the masala and it becomes dry
- Garnish with lemon juice and spring onions
- Serve immediately
- If u are going to serve later keep the masala and the fried idly ready and mix only before u serve
