Tomato curry is made in various styles....this is my version
Ingredients:
- Tomato (Big and Ripe) - 3
- Onion (medium sized) - 2
- Coconut - 2 tbsp
- Ginger Garlic Paste - 1 tsp
- Cumin seeds - Seasoning
- Chilli powder - 1 tbsp
- Coriander Powder - 1/2 tbsp
- Rice - 1/4 tbsp
- Toordal - 1/4 tbsp
- Salt - To taste
Method:
- In a vessel heat water and put the tomatoes and boil for 5 mins
- Now make a tomato puree
- You can skip the above two steps if u have a tomato puree u can use about 1 cup
- In a pan heat oil add rice,toordal and half of the chopped onions
- wait till the onion becomes translucent
- Now add chilli powder and coriander powder
- saute for another 2 mins switch of the stove and wait till its cool
- In a mixi jar Add coconut and the saute onions
- Grind it to a smooth paste
- Now in a pan Add oil and splatter the cumin seeds
- Then add the balance onions and saute till translucent
- now add the grinded onion and coconut masala
- Cook for about 3-4 mins
- Then add the tomato puree
- Add salt to taste
- Add a cup of water and let it boil for about 6-8 mins
- Garnish with coriander leaves
- Best for idly,dosa and rice
