This the traditional mutton kulambu we do in our home ....  a bit big process but gives great results

Ingredients:

  • Mutton (With Bones)-1/2 kg
  • Small onions (Shallots or Sambar onion) Chopped finely - 1/4 Cup
  • Tomatoes Chopped- 2
  • Cinammon,Cumin - For seasoning
  • Ginger Garlic paste - 1 1/2 tbsp
  • Coconut Paste - 1 cup
  • Curry Leaves & Corainder Leaves - For Garnish
  • Salt - to taste
  • Oil - For Seasoning

For Grinding Masala:

  • Red Chillies - 10-15 nos
  • Green Chillies - 3-4 nos
  • Coriander Seeds - 2 tbsp
  • Pepper corns - 1 1/2 tbsp
  • Curry Leaves - 1 strand
  • Rice - 1 tsp
  • Urdal - 1 tsp
  • Toor dal-1 tbsp
  • Castor Oil - 1 tbsp
  • Cinnonam - one small piece
  • Small onions (Shallots or Sambar onion) - 1 cup
  • Tumeric powder - 1/4 tbsp
Method :

For Masala
  • In a Kadai add Heat Castor oil ,Add Rice,urdal,toordal and saute for 1/2 min
  • Then remove the stem from the Red chillies and green chillies and add 
  • Saute till the red chilli colour turns
  • Now add Coriander seeds and Pepper corns
  • Make sure Coriander is not burnt or the whole dish will get a bitter taste
  • Switch off the stove and transfer  it to Plate so it can cool well
  • Mean while in the same kadai add a tbsp of oil ,Once its heated up add the Shallots,Cinammon and curry leaves
  • Saute till the Onions turn transculent
  • Now add the Sauted Onion mixture to the Chilli Mixture and grind in to a smooth paste
  • Make sure its really very smmoth paste as if the coriander seeds have not been grinded well it will give a bitter taste
Kulambu:
  • In a Pressure Cooker Heat oils and spulutter cumin and cinnomon
  • Then add Diced Shallots once they turn golden brown add the ginger garlic paste and curry leaves
  • Once the raw smell of ginger garlic paste is gone add tomatoes
  • Cook till the tomatoes are softened
  • Now add the Diced and Cleaned Mutton Pieces
  • Once they start oozing some water
  • add salt
  • Saute of 2-3 mins till u get nice aroma from the cooker
  • Than add the grinded masala and two cups of water
  • Close the cooker and pressure cook till 4-5 whistles or till the mutton is cooked
  • After the whistles get off
  • Open the cooker and add the coconut paste
  • let it boil for 5 mins
  • Garnish with curry leaves and Coriander leaves
  • Mutton kulambu is ready
  • Can be served with idly,dosa,idiyappam,rice
