Being a very big fan of pickles cannot stop posting the first recipe on my favorite lemon pickle
Ingredients:
Lemon - 10-15 nos
Red Chilli Powder - 150 grams
Salt : as needed
Gingerly oil : 250 ml

Method:
For me choosing the lemon for pickle is more important than making it...
the lemon should be medium sized not the small or the very big ones....if u cut the lemons in to eight pieces it should be giving at-least a inch size each piece

-In a big vessel boil water ,switch off the stove and add the whole lemons let it be in it least for one hour (this process will remove the bitterness and any insects in the lemon )
-Take the lemons from the water and wipe it with a clean towel
-Cut the lemons in to 8 pieces or 6 pieces as per you preference and put it to a large bowl
-Now add at least a hand full of rock salt in the sliced lemons and mix it so that the salt is spread all over the lemon pieces,
Keep this covered with a muslin cloth in shade for 1 or 2 days

-after the lemon and salt mixture is soaked well,in a thick bottomed kadai,add gingerly oil,mustard seeds,asafoetida,and strand of curry leaves till they crackle well
-Now add Chilli powder ,immediately add the lemon mixture and mix well
-The Pickle is ready...
Tips:
-Don't use bare hands to take the pickles which will spoil the pickle soon
-Don't Store the pickle in silver containers as day by day the container itself will get holes
-Always store pickles in a airtight container or mud pots which will give pickles longer life...
-u can use the same recipe for other pickles such as mango,amla etc
