This Dish is my hubby's all time favorite dish....its been years we are doing this and still love it every time we eat...best accompanied with sambar or curd rice
Ingredients:
  • Sweet Potato - 2 -3(medium Sized)
  • Onion - 1 (Chopped)
  • Tomato - 2 (Small,Chopped)
  • Sambar Chilli Powder - 1 tbsp
  • Tamarind Extract - 1 tbsp
  • Salt To taste
  • To Garnish - Coriander and Curry leaves
  • Oil - 2 tbsp
  • Cumin seeds - 1/2 tbsp
  • Cinnamon - 1 small piece
Method:
  • In a Pan add two tsp of oil and splutter with cumin seeds and curry leaves
  • Add Onions and Saute till they are translucent
  • Now add 1/2 tbsp of Ginger Garlic Paste
  • Let it cook for few mins
  • Then add Tomatoes
  • After a min of sauteing add salt ,sambar chilli powder and simmer the stove
  • Let the Tomatoes get cooked till its mashed
  • Then add the sweet potatoes which are diced 
  • Bow add the tamarind extract and 1/2 tumbler of water
  • Cook till the water is reduced or the sweet potatoes are cooked
  • Switch off the stove and garnish with coriander leaves
Note:
  • Sambar chilli powder can be substituted with 1 tbsp pf red chilli powder and 1/2 tbsp of coriander powder
  • Try using Coconut or Gingerly Oil for different taste
  • Best tasted when brinjals are added
