This Dish is my hubby's all time favorite dish....its been years we are doing this and still love it every time we eat...best accompanied with sambar or curd rice
Ingredients:
- Sweet Potato - 2 -3(medium Sized)
- Onion - 1 (Chopped)
- Tomato - 2 (Small,Chopped)
- Sambar Chilli Powder - 1 tbsp
- Tamarind Extract - 1 tbsp
- Salt To taste
- To Garnish - Coriander and Curry leaves
- Oil - 2 tbsp
- Cumin seeds - 1/2 tbsp
- Cinnamon - 1 small piece
Method:
- In a Pan add two tsp of oil and splutter with cumin seeds and curry leaves
- Add Onions and Saute till they are translucent
- Now add 1/2 tbsp of Ginger Garlic Paste
- Let it cook for few mins
- Then add Tomatoes
- After a min of sauteing add salt ,sambar chilli powder and simmer the stove
- Let the Tomatoes get cooked till its mashed
- Then add the sweet potatoes which are diced
- Bow add the tamarind extract and 1/2 tumbler of water
- Cook till the water is reduced or the sweet potatoes are cooked
- Switch off the stove and garnish with coriander leaves
Note:
- Sambar chilli powder can be substituted with 1 tbsp pf red chilli powder and 1/2 tbsp of coriander powder
- Try using Coconut or Gingerly Oil for different taste
- Best tasted when brinjals are added
